Cooking Time: 35 mins
Serving size: approx. 6 (depending on how hungry yu are!)Grocery List
Almond milk - 1/2 cup
Coconut oil - 1 Tbsp
Protein Powder (Lean Whey- Vanilla)
Porridge oats - 300- 500g
Nuts & seeds of your choice- approx. 200G
Cinnamon- approx. 3 Tbsp
Honey (or Vegan alternative) - 4 Tbsp
Cocoa nibs & Goji berries- a small handful of each
Method:
1. Prepare sauce in saucepan by adding:
Add 1 Tbsp Coconut Oil
½ cup almond butter
1 Tbsp Vanilla Extract
2 Tbsp honey (or vegan alternative)
1 serving of Vanilla protein
2. Mix together in saucepan on a medium heat until a medium to thick consistency is formed (approx. 5 mins)
3. Add oats & mixed seeds, nuts & cocoa nibs to a mixing bowl
4. Pour over the sauce and mix with your hands until covered
5. Pour mixture onto a baking tray lined with baking paper
6. Sprinkle cinnamon on top & place into the oven at 180 deg C for 10 mins
7. Remove from the oven after 10 mins, add the goji berries & mix the granola to ensure it bakes evenly
8. Place back into the oven for a further 15 mins (keep an eye on the oven to be sure the granola doesn’t burn)
9. Remove from the oven and allow to cool
Serve Up in whatever way tickles your fancy- I love it with low fat greek natural yogurt & honey
